POM Tastic Two!

Hello everyone! I’m finally catching up! When I got home from work on THursday one of my fave things in the world was waiting on me..any guesses????

My FAVE!

A PACKAGE! Woohoo! But what made it even more FANTASTIC was that it was from the wonderful people at POM Wonderful!

They so graciously shipped me a case of their amazing pomegranite juice to experiment with! I feel so special! Not only is Pomegranate super tasty, but it also provides many health benefits and is super rich in antioxidants!

I was literally like a lil kid on CHristmas when I opened it. I immediatley knew I had to take advantage of this opportunity and start experimenting right away! So, the decision was made…I was on a POM mission for tonights din din!

BUT, before we go there, lets talk about my sweat session. I tried a different, lil less ass-kicking, version of the workout I did on Wednesday night. Same idea, just some different workouts. Performed as fast as you can, except for the elliptical, it’s always 5 minutes.

5 minutes on elliptical

50 overhead shoulder press, 20lb barbell

50 bosu ball side jumps

50 chest press, 20lb barbell

50 crunches, first 50 were with 20lb barbell lifted and brought feet to touch it, the next 2 sets were bosu ball crunches.

Do this whole thing 3 times as fast as you can. My time was 34 minutes, 15 were obviousley dedicated to the elliptical. SO that means I averaged a lil over 6 minutes for each round. Ehh, not too bad for me. I cooled down with another 30 minutes on the elliptical. 10 minutes on 20 resistance, 5 minutes on 15, and so on till the end. Good workout!

OK, back to the food!

I already knew I wanted to make roasted brussel sprouts, so I thought, what the heck, lets make this work. I’m going to call this lil diddy, POM Asian Sprouts! Here is what I used…

POM Wonderful Pomegranite juice, sprouts and soy sauce.

I was fresh out of low sodium soy sauce, so I had to go with what was available. Oh well, I lived. Obviousley, you know when I get started, I just start throwing other stuff in my recipes too, so some red onion and sesame seeds were quickly added to this combo.

I quartered my sprouts, placed in a mixing bowl with sliced onion and sprayed with cooking spray. Then I added some POM Wonderful pomegranate juice, soy sauce and sesame seeds. You know I don’t measure, so just use good judgement. Start with a little and then add more if needed. Then toss and turn to coat.

The pomegranate juice really gives the sprouts a beautiful color. I spread them out on a foil lined baking sheet sprayed with cooking spray and put in the oven at 375 degress for 30 minutes, tossing halfway through.

Now, when I roast my sprouts, I like them to be really crispy. I turned the oven on low broil after 30 minutes and let them go for a couple minutes, then turned the oven off and let them continue to sit inside until I was ready to get  my grub on.

While the sprouts were a roastin I zapped this Sea Cuisine Teriyaki Salmon that I picked up from Sprout’s Farmers Market.

 This salmon was really good and it only took about 7 minutes to make. Just pop it in the microwave and it’s done! How easy is that?!? WHile all that business was goin on I snacked on a few garlic stuffed olives. Yummmm.

A major weakness

I know I’ve said this a million times, but olives really are my weakness. I can spend hours and hundys of dolla bills yall at an olive bar.

Finally, the long awaited sprouts were done!

POM Asian sprouts and Teriyaki Salmon.

This experiment turned out fabulous! The flavors of sweet and tart from the POM Wonderful pomegranate juice mixed with the salty flavors of the soy sauce worked so well together.

A POMosa! No, not a POMtini, even though those are wonderful, it was morning time people. This was champagne, POM Wonderful pomegranate juice and a squeeze of lime juice. POM tastic!
