3 Day Weekend!

Yippee skippee! It’s Friday, and it’s not just any Friday…it’s a holiday Friday! WOOHOOO! 3 day weekend!

Happy Memorial Day weekend to all! And lets not forget what the real meaning of Memorial day is! Please keep in your thoughts and prayers all the brave soldiers and people who have put their lives on the line to allow us to live in the most awesome coutry in the WORLD! Without their courage we would have nothing!

I’m planning on have a really good workout weekend! I am in serious Vegas poolside mission mode! hehe.

Tamale I am going with my girlfriends to see SATC 2, even though I never saw the first one, anytime I get to spend with my girls=Happy Heather, and I need that! YAY!

What do you have planned for this long weekend?

I would LOVE to go out onthe water somewhere and float and fish and hangout with friends. Wish I had that available. Crazy that I live 1/2 a mile from a lake, yet none of my friends have boats. lol

Backing up to yesterday…I went ballz to the wall and went to lunch with my coworkers. Mexican it was! My fave!

That’s my coworker, Scottie, in the pic. He is on my bloggy from time to time. He’s also a loyal reader! SHout out Scottie D! And that’s my other coworker, Joe, sitting next to him. I got my usual, heart attack on a Fiesta dish…bean and cheese nachos with sour cream and guacamole and jalapenos.

I intended on making it to Colleeens cycle clas last night, but caught up running to many errands so I ended up working out at home. 45 minutes elliptical, abs and then a lil of the new Body Pump 74.

While I was working out, I had my tofu pressing getting ready to cube and marinate so I could bake it up. I marianted in low sodium soy sauce, terryaki sauce, garlic, salt and pepper.

I picked up this package of Simply Asia Hunan Broccoli steamer seasoning at Target so decided to try it out.

I baked my tofu at 400 degrees for 20 minutes, then flipped and baked for another few minutes. During the last few minutes, I prepared my veggies according to the package and zapped inthe microwave to steam up. Instead of all broccoli, I used snow peas and carrots too.

The tofu was baked perfectly and the veggies were very good. The hunan was a lil sweeter than I thought it would be, but still good.

On another note, all of my pics uploaded today! WOOHOOO! It’s like a bloggy miracle! My weekend is already starting out good! Hope everyone has a safe and wonderful long weekend!

    Thank goodness for a three day weekend- wahooo. We haven’t been out to mexican in so long. ❤ chips and salsa. Your tofu looks like it came out perfect. I have never made tofu at home. Let us know how S&TC is!
